Every coffee cherry on MM Coffee Farm is handpicked with care to insure ripeness. Our employees work hard to ensure not a single coffee cherry used to make our coffee has touched the ground.
Once the cherries have been picked, processing must begin quickly as possible to prevent spoilage. The natural process (also known as the dry process) has an intensely fruity and sweet profile with a very syrupy body. The natural process can be advantageous to growing regions with little access to reliable water sources
Washed process (also known as wet process) are dried without the cherry. Washed coffee is de-pulped, then fermented to promote the separation of any remaining tissues from the bean and parchment, then washed clean prior to drying.
